Simpler is better, except when complicated looks really cool.

A few years ago I discovered shellac as a great interior finish. I wouldn't use it for tabletops or floors but it's good elsewhere.
I was born on a wooden boat that I built myself.

I have used shellac 3-pound cut for table tops with no problem, with a bit of care.

I like lacquer and use it on everything, especially my machine table tops out in the shop.

(My favorite Lacquer for furniture is French polish, which can be tuned up in a few minutes)

You do have to provide protection for furniture that may/will be exposed to clueless fools with alcohol based drinks, and fookin potted plants...
Sample scraps of Marmoleum (or leather) cut into suitable sizes work pretty well. I used to keep a stack of cd's for that, but they've gone away.

The water-based poly will not provide a buzz, but if you use it long enough you will get your best ever toe-curling headache.

Lacquer-brain is a well recognized affliction. There are programs ready to assist. Seek help before it's too late.

When I run a paint shop, there were these two young men that would soak their respirators in lacquer thinner at the start of the shift. They could paint, stay on their feet and always showed up for work.

I don't think Jesus had much to do with that, they both died really young, they would huff anything they thought would give them a buzz.

Re: why did i ever varnish

I worked part time in a shop doing motorcycle work when the first catalyzed automotive paints came on the market. The guys that were used to spraying lacquer (nitrocellulose) never bothered to wear a mask. One evening one of them spraying his own car project with the new sh!t and died between coats, the catalyzed paint kicking off in his lungs, slowly suffocating him with no cure...
