Im using www.bateau.com marinepoxy at $66/gal, Ive been VERY happy with it, prefer it to West System.

I've used US Composites 635 Thin Epoxy with Slow Hardener on a bunch of strip kayaks. Works great every time with no surprises.

One of the more important issues is blush.
The slow hardener is non-blushing (good). The others are blushing (bad).
Maybe I've just had bad luck but I've used US Composites and it didn't work well for me.
I built a cheap canoe with it and the unthickned epoxy never kicked 100%. Maybe it was a bad batch but none of the batches out of those containers kicked 100%.
