All that clutter and chatter over on Paul's pig roast thread reminded me of a recipe for rabbit that I made years and years ago...
Chilled rabbits, skinned, cleaned and decapitated. Par-boil some rice, I like a mix of white, and wild. Chop up some parsnips, celery, and carrots. A hand full of dried cranberries or raisins. Mix all these together with the rice, and stuff the bunny. Sew the cavity closed. Make sure that you don't over stuff it, the stuffing will expand. Season the outside of the rabbit with salt, black pepper, sage, rosemary, chives all mixed in to a bowl of flour. Baste the rabbit in melted butter, and dredge it through the flour mixture. You can do this last bit several times, if you want.
Cook over a hot charcoal fire in a rotating rack, or on a spit. Keep it moving!
When the legs move freely, and the juices run clear, it's ready, probably about 30 minutes or so. Don't over cook it, or it'll be tough.
Special on tap: Greene King Abbot Ale. From Suffolk, England. A sweet, molassesy ale, with a dark copper color, and a slightly thick character.

Grandad brought home three young bunnies he found under the chikkin' house and I fed them as pets.....bad move.....
They were tame cottontails and hopping around the yard, well fed, fat little critters..easy for mom to catch....came home one day to fried wabbitt...I think the only pet that I had that she didn't cook was old Bozo, the german shephard...

Nope..... Bunny cooked as described int dry at all. Quite the opposite. The veggies keep it hydrated I think.

Carter made a nice sweet and sour Hawaiian style pork dish last night, with julliened green peppers, carrots, onion, pineapple, and a brown rice pilaf. This being un-employed is having a good effect on her kitchen skills.
Baked macaroni and cheese with extra cheese on top so you get that nice crispy crust, with corn bread and butter, and steamed asparagus.
Fried egg and cheese on a sliced bagel with a thick slab of honey baked ham.
Pan seared bay scallops, served over angel hair pasta with a creamy Alfredo sauce. Crusty garlic bread on the side.
Special on tap: We have a bunch of half full kegs, so today, let's try to finish off a few to make room for some new varieties.

Didn't feel much like cooking tonight.....so stuck another north end of a south bound cow in the oven to slow cook....made some tangy Okiehoma style BBQ sauce....
Made some Ghiradelli special brownies with pecans.....'cause I have a gallon of vanilla ice cream in the frezer....
BBQ sammiches with Brownie and ice cream and Kona coffee..

Hummel bros. Georgia hots, steamed, fried, grilled, or steamed THEN grilled. Served on a potato flour roll, with mustard and catsup. Fries and a a stuffed pickled hot cherry pepper.
Tuna melt on rye, with gruyere cheese, and a cup of cream of tomato soup. Deep fried prawn chips on the side.
Shredded beef loin marinated for 24 hours in hot pepper sauce with a splash of vinegar, and a healthy dose of chilli powder, then browned in a skillet with onions, green and red bell peppers, crushed tomatoes, and black beans. Served with thick slices of crusty peasant bread and butter.
Baked ham. served with a baked potato, steamed broccolli or asparagus, and a spinach salad with warmed raspberry vinaigrette.
Special on tap: Viking Lager. From Akureyri, Iceland. A crisp, sharp beer, with lots of bubbles. Lots of corn flavor, and lots of hop bitterness. An "easy drinking" beer.

There ain't NUTHIN' in Akureyri, Iceland.....it's about as far Nawth as you can get...only puddle jumper airplanes get in and out.....the U.S. Navy has crashed 3 C-47's there trying to land or takeoff with the cross winds....and the only beer from there is what is salvaged from the local horses taking a ....break.......The locals would steal the drums of de-icing fluid from the airport (grain alcohol) and mix it with Tang for their local "brew".....
The local harbor is a bad place to be when the breeze is going offshore....just inside the harbor is the area where they bury the shark carcasses to "cure" for the holidays.....

Hákarl or kæstur hákarl (Icelandic for "fermented shark") is a food from Iceland. It is a Greenland or basking shark which has been cured with a particular fermentation process and hung to dry for 4-5 months. Hákarl has a very particular ammonia-rich smell and taste, similar to very strong cheese. It is an acquired taste and many Icelanders never eat it.
Hákarl is served as part of a Þorramatur, a selection of traditional Icelandic food served at Þorrablót in midwinter. Hákarl is, however, readily available in Icelandic stores all year round and is eaten in all seasons.
Consumption
The shark itself is poisonous when fresh due to a high content of uric acid and trimethylamine oxide, but may be consumed after being processed (see below). It has a particular ammonia smell, not too dissimilar from many cleaning products. It is often served in cubes on toothpicks. Those new to it will usually gag involuntarily on the first attempt to eat it due to the high ammonia content. First-timers are sometimes advised to pinch their nose while taking the first bite as the smell is much stronger than the taste. It is often eaten with a shot of the local spirit, a type of brandy, called brennivin. Eating hákarl is often associated with hardiness and strength.
It comes in two varieties; chewy and reddish glerhákarl (lit. "glassy shark") from the belly, and white and soft skyrhákarl (lit. "skyr shark") from the body.

Naw...liquid shark manure maybe.....shark can't urinate so it's sent to their blood vessels that line the back, the strips of dark meat in the center of the back, and the shark leaches the urine out of it's body through the skin in this area...this is what becomes the "delicacy: of the shark meat.

When I serve shark, it is fillets of baby Bull shark, coated in a light and crispy beer batter and deep fried, then wrapped in a fresh hot flour roll and drenched in hot sauce. It is called "Bake and shark" and is deliscious! I learned this recipe in Tobago, but even Tobagoans will tell you that the best bake and shark is found around Blanceuchase, (or however it's spelled) Trinidad.

I've a beer that I'll try tomorrow, called "Criminally Bad Elf" 10.5% by volume.The car stays in the garage tomorrow.
For eats it'll be baked potato, cooked the way I had it at the IFOS Brest. Baked, open the top, add garlic butter, diced ham and a good cheese. Back in oven until the cheese melts-goes crispy to taste.
It really is quite difficult to build an ugly wooden boat.
