I'd call them "Brass Finish Hex Head Furniture Connector Bolts"

Jim - I checked AMAZON (no affiliation) and found "Joint connector bolts -- 014973445720" , looks to be similar --- hope that helps . . .

If it has a female thread, then it's a socket joint connector barrel nut.

Kindalike 'T(eethed)-nuts' but sans teeth, and with a hex socket at the exposed end.

Lee Valley Tools calls them "1/4-20 Quick-Connect Large-Head Bolts"

    https://www.leevalley.com/en-us/shop...rge-head-bolts

Sometimes, they're "connecting bolts" or "connecting screws":

    https://www.mcfeelys.com/screw-faste..._head_type=439

But I think they are more properly called "wafer head hex drive connecting [bolts|screws]".

A manufacturer of them calls them "Furniture Connector Bolts – Type E1".

    https://www.fastenright.com/general-...s-type-e1/ff06

And variations on "Furniture Connector Woodscrews"

    - Furniture Connector Woodscrews
    - Furniture Connector Woodscrews with Shoulder
    - Mushroom Head Furniture Connector Woodscrews
    - Mushroom Head Furniture Connector Woodscrews with Shoulder

So many names for the same thing.

And depending on your use case, the screws, at least, also come in thin shank versions, which have a shank the same diameter as the root of the screw, so you just need to drill a pilot hole for them. No need to drill a clearance hold the diameter of the shank.
