I'd call them "Brass Finish Hex Head Furniture Connector Bolts"

If it has a female thread, then it's a socket joint connector barrel nut.

Kindalike 'T(eethed)-nuts' but sans teeth, and with a hex socket at the exposed end.

And depending on your use case, the screws, at least, also come in thin shank versions, which have a shank the same diameter as the root of the screw, so you just need to drill a pilot hole for them. No need to drill a clearance hold the diameter of the shank.
