"Pure ground beef" A.K.A not adding any ingredients to improve the texture or flavour.
Cheap, consistent, and marketable.

A challenge: find a burger chain that uses something other than 100% meat (pro tip: there are valid reasons for blending beef, pork, veal, or adding gelatin, a beef byproduct).

Many years ago on the road I stopped at a burger place, I *think* it was Steak and Shake, it was superb, had to wait for it cooked to order; Was thicker than the average but most of all was *really seared* crisp on the outside without being overcooked, they must have a volcano-hot grill. Not cheap.
In recent years the neighbor of someone I know, was getting rid of a pricey grill (I think Jenn-Air(?), stainless steel on top but not on chassis and it had rusted to where the wheely axle had collapsed), but was way better than my friend's grill so we take it, I add some wood structure to support the axle, works good as new. Well that six-burner (under the hood) bad boy had an auxiliary infrared *searing burner* on the side with a ceramic brick with holes to distribute the propane. Neighbor said it never worked. I look underneath, whoever assembled it didn't get the propane steel line aligned with the inlet to the burner, was sticking below. I pull apart and assemble proper, fire up, blows like a blast furnace on high. I made some medium-thick burners, 1 minute 45 seconds on each side and then resting on a plate produced burgers with a dark-brown crispy sear but just barely still pink inside, delicious. At some point I'll have to find a portable searing burner like that or steal that off another grill being junked.

Here in SoCal, The Habit Burger Grill sells burgers that are pure ahi tuna. Best burgers I've ever had!!!
