( full disclosure : my wife's earliest, best friend from our move to Houston, TX was from India, and an excellent cook ) * * Tell the grandson to be very cautious about those tiny red and green peppers which appear in some Indian dishes, they have a 'bite' bigger than their size suggests. My then-teenaged son casually grabbed a handful of a snack mix containing those peppers, before our friend could caution him, as he chewed - his face went red and sweat poured off him * * *

Pickles in India might be rather different than pickles here in the USA, though.

Son1 did some traveling in India after he got out of the Navy. Brought back a big jar of Mango/Lemon pickle. Different. Lots of spices, and in pickled in oil. He said they pickle tons of things.

Take the kid to an Indian grocery store, let him pick out whatever pickles he likes.
When you got no refrigeration you turn to spice and vinegar.
Of course there are pickled foods in India.

Three different pickles in my cupboard- lime, brinjal and spicy mango.
Indian pickles tend to be in oil though, not vinegar.

Where I live in Abbotsford we have lots of folks from India. Hence grocery stores shelf lots of foods from India. Lots of pickles from India.

A more important, and disturbing, question is, how does your 8 year old know about the Bilge?
About 1/2 of the dill pickles in our grocery stores are product of India. I choose to pay a bit extra to get made in Canada dills.

I had some pickled things at an Indian restaurant that had a slight aroma of varnish. I like varnish so that’s ok.
So, my step daughter has been working as a "nanny" since her almost fatal traffic accident and has a child in her care that is going to India for the holidays
I asked her specifically to query the child before they depart to note what kind of pickles can be found there!
So we should have the definitive answer from a ten year old lad in a few weeks.
He has discerning taste, and is a bit of an artiste!
