    Default Do you foreign folks eat a pigs ass?

    Because if you don’t you should! Very slowly smoked until the internal temperature reaches 205F.

    now the hard part…. Letting the meat rest for 20 minutes.

    Is that really the ass?

    You can buy a whole pork shoulder at some grocery stores, but you'll commonly find the shoulder cut into two pieces. The upper part is our Boston butt (sometimes called "blade roast"), and it comes from right behind the pig's neck and typically contains a small piece of the shoulder blade. The lower part is called the picnic ("arm roast") and includes the rest of the leg down to the hock.

    Looking for Atlantic Croaker in the AM and maybe some saltwater catfish.....hence my box of pig rectum. Really would like some croaker tomorrow.

    It's called Schinken in Germany. Often smoked, sometimes boiled. The Italiens are good at it (Prosciutto di Parma) as are the Spanish (Serrano and Iberico) and the British have their fried ham for breakfast.

    The whole pig goes on the spit here mate! Pigs ear? Delish and crunchy! You over there eat pigs trotter? Mum used to get one at the corner store after Mass on a Sunday. Mum must have been special because we only got cabana and a bag of mixed lollies. Sometimes if we were real good we would get a bite of the trotter….. a real delicacy!

    I do. But the weather was so nice I took it off today. I was wearing SPF 100 sunscreen. I think I will be fine, at a tavern having a beer now….. no sunburn.
