If you haven't had her out yet, I hope your wife won't find her too tippy when getting in; the final stability will be higher than the canoe.
The SOF gunning dory would have been large enough but with less initial stability, I'm guessing less than the canoe; might need to be leaned over beyond you wife's comfort point before the final stability kicks in.
A boat to car top that can carry two adults & a couple of kids is a tall order, Of all the boats suggested i think the Cosine wherry is one of the best, At 14ft it is a bit small but they can be built really light.
If you stretched one to 16 ft it makes a far better boat.
I have a Grp version that is 16ft, fast to row & has a small balanced lugsail for downwind work. She will not go to windward but thats what the oars are for! On a reach or downwind she goes like a train!

I think you've made the right decision to go with a trailer. Humping that beauty up onto then off a 'rack is gonna get reet tiresome reet quickish.
To say nothing about how long it'll take the hernia to get fixed.

Has anyone figured out definitively how much drag a centerboard slot adds? Would it be worth adding a flexible flap to close it when rowing?

We launched Kingfisher on New Year's day. We didn't go far because it was very chilly but I was very pleased to confirm that it floats and doesn't seem to have any leaks!.
