This is my favorite for oddly shaped work (ukulele bits). It mounts to a benchtop up to 5 in thick. The jaws and the whole unit swivel.

I reckon I might actually have half a dozen, from one similar to #14, to a blacksmith's tail vice, to a couple of big wooden ones on my vintage carpenters bench, to a bookbinders lying press attatched to the end of that bench, and a tiny fly tying vice.
Mostly inherited apart from the lying press.Comment

In that case get yourself a set of plans or a kit and jump in.If you don't like the results save the salvagable parts,give it a decent cremation and start again. I was surprised and pleased with how my first one looked and sounded.I'm not a player so the fun for me is all in the build.

I have a smiths leg vice and a carpenters leg vice on the bench in the shed.It really is quite difficult to build an ugly wooden boat.
