And put a little damn vermouth in it. This idea of extra extra dry with no vermouth is crap. There’s a reason there is vermouth in a martini. Otherwise it s just cold gin.![]()
Can’t find Micil around here, even for a taste. Seattle now has a lot of new distilleries and many make gin. But the tastes of gin varies a lot with the botanicals used. I’ve experimented with several, but so far I’ve always come back to Sapphire for my martinis. For gin and tonics I really like Bell Ringer which is actually a pretty inexpensive gin but it seems to work really well with Schweppes tonic.
Now look what you’ve made me do!
Adnams Copperhouse was voted "World's Best Gin" in 2013, but times have moved on.. I still like it, though. It has replaced Gordons just as Fevertree has replaced Schweppes.
Berry Brothers and Rudd's No.3 Gin is the best in a dry Martini.
Plymouth is best in a pink gin.

... and at the other end of the scale, we had some godawful gin the other night in Pai. We ended up at some hippy bar out of town. One of the guys (apparently) was on mushrooms and ended up getting banned for life.... not because of having eaten magic mushrooms, but he apparently offended someone. Back to the gin. It was awful. I don't even want to know what it was.
We sell three or four at our bar... Bartons (cheap and nasty), Gordons, Sapphire... and I will have to see what else later.

A couple I tried in Australia this winter…
Sipsmith is really good. I'm not an expert, but I felt it was better than Bombay.

Also tried some 4 Pillars. They are a distillery down near Melbourne. I was working nearby, but never had a chance to the visit their shop. In any case, I bought a variety pack of small bottles and like each one. No surprise there.

Second the fever tree as the tonic water of choice.
My preference is "Victoria Gin" from.....Victoria.
Lots of micro distilleries around. Some good, some far to hipster for me.
The Micil distillery is quite close to the house where we stayed in Galway City. If I'd known of it, I'd have stopped in.
If you're still in the area, I urge a visit to Kai, a café run by New Zealanders. Brilliant food!
