So, I have aquired 5 trees worth of eastern red cedar and they are fairly clean logs. 4 are full length and one is chopped into 5 foot sections. I will be getting one more full length tree soon. They are about 1 foot diameter. Is that enough cedar to build any type of boat? Or at least get a good start? What shoukd I get it milled down to? I am assuming erc makes a decent boat?

What kind of boat do you want to build? Don't use any sapwood, but there is enough in there for something strip built, or a crossplanked skiff with lapstrake sides.
