    White Bean soup with ham hock.

    Ingredients: Both Navy and Great Northern beans, smoked ham hock, chopped celery, carrot and onion, chicken stock, water, salt and pepper. Best on the second day which for me was last night for dinner.

    Picked up from The Rancho Gordo bean cookbook, a Mexican breakfast dish that we like for dinner: a nest of steamed asparagus with a mound of beans (chopped onion, bell pepper, grated cheese, etc.) with a poached or fried egg on top. It can be served atop a fried corn tortilla or polenta.

    Bronx Joe's Puttanesca

    I've posted this many times I might as well grace you with the recipe.

    Prep: mise en place

    Mince five cloves of garlic
    Dice two vine ripened tomatoes
    1 cup kalamata olives
    1/4 cup of brined capers
    1 teaspoon of balsamic glaze
    1 cup of fresh basil torn
    1 cup of Cento San Marzano pealed tomatoes
    2 tablespoons of mascarpone cheese
    1/2 cup of Parmesan reggiano
    1/2 cup of pasta water
    fresh ground pepper and large flake Kosher salt to taste.
    Pasta, usually I use rigatoni but tonight I had fresh homemade strozzapreti aka priest choker pasta from a local Italian market


    Cooking:

    Put a pot of salted water up to boil add a little EVOO aka extra virgin olive oil
    Heat a non stick skillet when hot add EVOO let the oil heat but not smoke.
    Once hot to sizzle add minced garlic
    when the garlic sizzles and sweats, don't let it burn or you will have to start all over
    Add torn basil, take a moment to smell the intoxicating smell
    Put pasta in the boiling water
    Add diced tomatoes, capers, olives, capers, balsamic salt & pepper
    Simmer down and reduce until the tomatoes blend into a roué
    Add pealed San Marzano tomatoes smash them into the roué
    Reduce down as the tomatoes and blend and start to produce a sheen
    Add 1/2 cup of pasta water and reduce.
    Add 2 tablespoons of mascarpone cheese to pink it up and add a little more sheen
    Drain pasta add to sauce serve with a garnish of Parmesan reggiano and a sprig of basil.

    Chicken Biryani tonight and I am really looking forward to have my dinner.
    It's gonna be first time in while for me and wife to have dinner without kids (they are staying with the grandparents tonight) and we have a very nice menu planned. We also have a good bottle of wine prepared (thanks god my wife ordered here victoza online in case her sugar level will go up) and a really special dessert.

    Used up the sausages. Just cut into medallions and sauteed. We'll have leftover brown rice, and I'll steam some broccoli. Tossed salad. Butter Pecan ice cream for dessert.
