this aged for 10 days. I froze the coconut till i could get to it, then slicing it thin, sprinkling sugar, cooking in a 190F oven for 6 hours. it came out crunchy

update on the rum filled coconuts; A friend tried his after a week, reports the rum was delicious, the coconut meat flavorless and tasted like styrofoam... And here I was thinking rum coconut...
