I forget whether that motor requires a pressurized fuel tank, but if not, there are some smaller tanks, 2.5 gal, you can buy these days. Might fit.
Wouldn't the insurance company just pay you the current market value of the vehicle, which I suspect is less than a paint job?

Most paints these days dry too fast unless you're painting on a cool cloudy day with some humidity. They need a brushing liquid to slow down the rate at which the paint "tacks". Otherwise you can't...
