It would work, after a fashion. The bermudan rig would have had camber where you cut it, while the gaff rig would not.

John, I guessing it's a screw otherwise the fitting was attached before the deck was. If that's the case an access plate seems the way to go.
Can you remove the remaining fastener. Is it a screw or nut and bolt? Once the forward screw (hopefully a screw) is removed, screw it into the aft hole to determine if the hole is wallowed out or...
