I'd think the bulkheads are integral to maintaining her shape and you would want to retain them until the rest of the structure is more stable.

Good for the locks to be aligned with the rowing position so your stroke is even and in line with the boat. 1/2" in the middle of the boat will not be noticed by many.

I'd expect it to be quite normal. With stock near or square in cross section, twist is not a big problem when steaming.

Oil comes in various levels of viscosity but generally I think oil more viscous than water, so would be more resistant to the bob motion, lighter but more viscous.
