I want to install depth and log in my boat, which is planked in 1" mahogany. All the instruments I can find use transponders with an outside diameter of 51mm. Given the deadrise angle, this will mean a rather large fairing block.....Does anyone know of a make that uses narrower diameter transponders?

Humminbird have a unit smaller than 52mm but it's a plastic.... Navman or north star use a 42 mm atleast in NZ they do but again thats plastic and you should probably use bronze otherwise you run the risk of cracking a plastic unit as the boat swells.
for your depth it's not the best but there is the inhull option.... useing a puck transducer or a thru hull in a oil bath.... as for the speed.... I have seen a sped unit designed for sailing dinghys and windsurfers that had no thru hull but a paddle wheel that was attached to the exterior and had a pick up inside the boat.... I can't remember the brand.
Tacktick might have a solution.

This works fine in a solid fiberglass hull but it won't work through wood, which absorbs the signal.
