Does anyone have experience with turning a big (42 ft LOD) deadrise hull over for replacing the fifty year old chines and crossplanked bottom?

No, but I'd guess the job would ordinarily be done w/ the hull jacked up high enough to work under her and upright. That's a lot of boat to roll over and keep in one piece. I'd have supposed that there are still a fair number of old timers in your neighborhood who did this routinely for a living who could advise, help, or do the job.

Without knowing the hull you can jack it up and lean it over or create a wheel such as pictured.
