"The project began four years ago when Wong How Man, a conservationist and explorer in western China, was invited back to the University of Wisconsin in the US to receive an alumni award.

While there, he invited Renee May, a dairy professor, to travel to Yunnan and help him to develop a cheese using yak milk. "


Notice they didn't go to California, Vermont, Or even France to learn the art of cheese...No they went to WISCONSIN .

As I have said before "Wisconsin rules the cheese world"!

Hmmm Yak cheese, I'll have to give it a try.:)

So they already had a yak cheese, it was just something that no one really wanted to eat, yes? So now they will create a cheese that can be exported, or is the idea to make something that the Chinese find more palatable?

Is nothing sacred? The Chinese will dominate the world of cheese one day, mark my words.

I think Mickey is right. China will become like Willy Wonkas chocolate factory,except cheesey.

A cheese Xanadu. A place of dairy wonderment ,and cholesterol. and quite bad digestive problems.
There will be a city named something like .... Bung. Bung ho perhaps.
