These my friends are BBQ'd Burritos. Stuffed with steak, tomatoes, avocados, onions and chedder cheese. Don't let your grills get cold before trying these this year. Yum! Yum!

He didn't make em, I did Jim. It's long recipe but basically what you do is marinate 1lb of round steak in 1 can of Hot and Spicy V8 with 2tbs. lime juice, 1tbs. veg oil and a half tps, of salt. Marinate for 8 hours.

Grill to desired doneness and stuff burritos with thinly sliced steak, chopped avocado, onions, tomatoes and cheese. Brush with your favorite BBQ sauce and grill each side until lightly browned.
I'm not gonna type the entire recipe tongue.gif but when Sue comes in, I'll see if she will as she is much faster than me.

That's OK I got it. Basically, fajitas (I know not exactly the same but in the spirit of) stuffed into a burrito sized flour tortilla slathered with BBQ sauce and grilled again. I'll try it when I get the chance, but the BBQ sauce bit I'll have to reserve judgement on until I've tried it. ;) Maybe green sauce instead!

A little hint. I think the next time I make these I'm going to use flank steak instead of round. They were good but the round steak was a little tuff.

Ninfa's Green Sauce

Notes:
This sauce is popular in many Mexican Restaurants down here in Houston. Ninfa's was one of the first restaurants to serve this sauce. You get it when you get your salsa and chips before your meal.

Ingredients:
3 medium Avocados
3 medium Green Tomatoes
4 fresh Tomatillos (find in your specialty fresh produce section of a grocery store)
3 cloves Garlic
2-3 Sprigs Cilantro
1-2 Jalapenos
1 1/2 C. Sour Cream
Salt to Taste

Preparation:
Peel avocados and place them in a blender. In a medium saucepan, boil tomatoes, tomatillos, garlic, and jalapenos for 15 minutes. Remove from saucepan and place all ingredients in a blender with the avocados. Add sour cream and blend until smooth.

I made them last night, as a trial run for LTP. They were very good! So good, my wife took the 4 extras in to work. By 9AM they were all gone. The vice president of Virgin Atlantic Airways, North American operations said: "That wrap was delicious! THANKS!" (Expect to see these added to the upper class menue) :D
