I made a chicken soup last night. Nothing special, a first boil with the carcase and carrot onion garlic celery peppercorns and bay, a little salt. Strain that, start up new onion, carrot, celery, pick the carcase. Throw in some noodle at the end, or rice earlier.

Anyway, I'm having it for lunch today, and the broth is really good.

One cold winter afternoon when my nephew was about 4 years old, I made chicken soup. He gobbled it down and then said, "Can I have some more of the breath"? I said, "What do you want?" He replied, "Some more of the chicken breath. I really like the chicken breath." :D

Ish, If you let the stock cool until the fat congeals at the top and skim it you will be almost assured a place next to the great cooks of Brooklyn. :D smile.gif
