1 C sugar
3/4 C vinegar
2 tsp. salt
1 tsp. red pepper flakes
Boil to disolve sugar and salt, then cool.
Add as many diced cucumbers as will fit, and then some, and stir to cover. Let soak a few hours in the fridge.
Before serving, top with some freshly toasted peanuts.

Our global warming is brewing up a good crop here. I've got fruit on Bell, Giant Thai Hot and Jalapeno. Just getting flowers on Tabasco.

No, I got too far behind this past Spring. I think I'm going to pot a couple of pepper plants this Fall. Too much work and too little time.
