    National chocolate pudding day

    According to the media here it's National Chocolate Pudding Day in the US. So heres my favourite recipe for a flourless pud/cake.

    Flourless chocolate cake
    2/3 cup almond meal
    1/4lb dark chocolate
    2 tbs milk
    1/2 cup sugar
    6 eggs separated
    8" cake pan
    45 mins at 175c. (TO BE CONVERTED)

    Whip egg whites, till stiff, with sugar. Melt chocolate in milk & add yolks & almond meal. FOLD into egg whites & scoop into pan. 35 mins, for pudding, 45 mins for cake, test with skewer.

    With rasberry sauce and clotted cream!!

    YUM!!!

    PS; If anyone has the recipe for the Waldorf Astoria Red Cake I'd appreciate it. Had it once from a girl in Minnesota but lost it.

    I'm told that pudding is 'strine for dessert. In the US, pudding is a custard-like substance, sometimes thickened with egg, sometimes not.

    Try this:

    Wisk together in a medium saucepan
    4 Tablespoon cornstarch
    6 Tablespoon sugar
    1 1/2 Tablespoon cocoa powder
    3/4 teaspoon cinnamon
    pinch salt

    mix together
    1 1/4 cups cream
    1 1/4 cups milk

    Add 1 cup of milk mixture to dry ingredients and wisk until disolved, then whisk in remaining milk mixture.

    Cook, whisking constantly, over medium heat until the mixture comes to a boil (full boil is important here, otherwise it won't setup properly) and thickens (about five minutes)

    Add 6 oz. of finely chopped semi-sweet chocolate and whisk one more minute.

    Remove from heat and whisk in 1 1/2 Tablespoon of butter (cut into small pieces to help it melt faster).

    You can cover it with a piece of plastic wrap to keep the skin from forming on top, but we think the skin is one of the best parts. Either way, stick it in the fridge to cool.

      Here's how we do it - pour cold milk in a bowl, dump in jello instant pudding mix, stir, chill (maybe) and eat. I know it's cheating and not nearly as good as the others, but in a pinch with a powerful craving for chocolate pudding it's perfect!

      Or, pour into a graham cracker crust, top with cool whip and eat

        Uh, Karen? Have you ever read the ingredients list on that crap? Do you value your health? There's darned little "real" food in "real" jello pudding. It's mostly artificial thickeners and artificial flavoring.

        Besides, with homemade, you get the yummy skin too.

        Edit: go with real whipped cream over coolwhip too. Add a dab of vanilla and a bit of sugar to dry it out and thicken it up.
