It is now time to replace the canvas deck covering on my Lightning. It seems that there is confusion and disagreement on the proper(?) weight of canvas to be used. I am expecting to use #10 duck (15oz) and bed in white lead paste
(Kirby's of course!) and fill with a few coats of Kirby Buff. I don't expect to race with the best so weight is not as stong an issue as longevity.
Any comments on materials, technique, or pitfalls would be enlightening, and appreciated.

For what it's worth, the hull of my 40+ year old kayak is made from painted 15 oz canvas. No substrate like your deck has, just the canvas.
It's still going strong.
I don't think you'll have much problem with longevity (unless of course you sail in football boots.)
