OK, I give up. HOW is that supposed to work, and what is the man on the sail even remotely going to fix?

At a guess, it looks to me like they are changing from their good canvas to their older canvas for the trade wind portion of a trip, the man on the sail has completed roving the reef tackle on the end of the yard, and is now roving the buntlines. The older sails were used in the benign lattitudes to avoid chaffing the good ones. The process is reversed as the ship reaches the higher lattitudes, and better condition canvas is required to cope with more extreme weather.
