Folks typically opt for cedar for planking salmon up here. How much flavour from the plank actually makes it to the fish, as opposed to smoke from the fire?

When you look at old picture you cant help but notice that all the trees have been cut down.

I suppose for heating and cooking fuel.

I love shad, but this seems to be just one more method of cooking that leaves intact the interwoven network of tiny bones that make the delicious bounty a real PIA to eat.
