Spent the day tending 8lbs of bacon in the smoker. It looks after itself so the day was an easy one.

The meat slicer and vac bagger do a really good job. Sliced and bagged up half and bagged the other half as two chunks,minus enough for dinner tonight.

Damn that looks good. Give us the details again. What's your brine? for how long? and you have a cold smoker right? You built it?

Paul this is hot smoked bacon, dry cured for 9 days.Takes about 8hrs in the smoker. I have a Bradley electric smoker with a cold smoke add on and an outboard controller for the box temp. Not very traditional but very effective. Here's a link to the recipe I use.
