Over dinner the conversation turned to unusual food combinations. My FIL remembers(fondly) the dessert mentioned above. He's from upstate NY about 80 years ago.

Anybody have any info re this?

Roger Tory Peterson liked eating peanut butter and sardines on a Ritz. Had my try a few crackers with that combo...Not bad really.

Seems that I recall this being a staple at the Methodist suppers here in the north country when I was a kid.

Sour cream frosting is the ONLY thing that belongs on top of a carrot cake.

Nope, no dementia - he just recalled it as a novelty from his youth. A couple of his younger sibs also recall it but no receipe.

MIL makes lovely cream cheese frosting for her carrot cake,but insists on befouling it with ungodly orange peel "zest"(shudder).
Even plain tomato soup poured over it must be better.

I remember my mother recoiling in horror when we first arrived in Oz at the concept of punkin or zucchini in a fruit cake.
Carrot cake!! Sounds revolting said she:D
she still refuses to make any cake with veggies in it 40 years later.:rolleyes:

Coelacanth2 -- Tomato soup in carrot cake as an ingredient, yes. I have vague memories of trying that decades ago when I was trying to live a very low-fat lifestyle. Moist cake, no tomato taste. Probably related to those recipes that call for apple sauce, prune puree, ... any number of fruit or veg things. Tomato soup in frosting ... no. I suspect your FIL had a speech fault, meant to say "carrot cake with tomato soup, and frosting."

After speaking with my Mother, we found this Spice cake receipt.The tomato soup is in the cake, not the frosting.

Sift together:
2 cups flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp baking soda
Cream together:
1 cup sugar
2 Tbls butter
Stir the flour mixture in three parts into the sugar mixture alternating with:
1 can condensed tomato soup; 10-1/2 oz.
Stir until smooth
Fold in:
1 cup nutmeats
1 cup raisins
Bake in a greased tubed pan @45 min @ 350f
Spread with Boiled icing or Cream cheese icing

What's " boiled icing"?

The fancy name is Italian Meringue Icing. White (usually) fluffy marshmallow-creme like stuff. Actually, marshmallow creme might have begun as a commercial version of stabilized Italian Meringue. Egg whites, sugar, water, cream of tartar; lots of recipes, modern methods use meringue powder and corn syrup (easier, more stable, ... too sweet for my taste.)

Sugar and water boiled until it it spins a thread @238-240f
mixed into whipped egg whites
it forms a hardened shell like icing
