My plans denote C.G. 2,700 LBS. I assume C.G. is Center of Gravity, but what does the 2,700 lbs mean? Is this the weight carrying capacity of the hull?

If the boat, built as designed (with NO substitutions or changes) weighs 2700 pounds, that mark is where the center of gravity should be.

If she weighs more or less, the C.G. will probably be different (and it might be slightly different even if she does weigh 2700 pounds; the planking, say, might be heavier, and the decking lighter, so that the total is 2700 but the distribution of weight is different.)
