Does the cockpit staving have a beaded edge or just a v groove between boards? I assume the joints are tounge and groove, or shiplap? Or is it all personal choice?

Probably mostly personal choice, but since the cockpit is exposed to weather and will need occasional varnish or paint and the necessary sanding, my personal choice is tung and groove with radiused edges, no v's or especially beading. Sanding any other shape is a real PIA. Need the tong and groove to allow for expansion.

How are they attached to the combing? glued or screwed? Or both?

It is really a matter of choice as to whether to use a bead and V or just V detail on t&g staving. Persoanly I prefer the bead and v for a sub deck that shows from
beneath. Remember that V grove is easier to sand when it comes time to refinish. The actual name of the Bead and V board is "Car Siding". It comes from the time that railway cars were lined with it.
