Eyjafjallajökull is an agglomerate, just three words stuck together as is common in Germanic languages.

It's Eyja (island) + fjall (mountain) + jökull (glacier)

Seems to be one persistent volcano. Out where I live, Mt. St. Helens blew, killed a bunch of people, then just grumbled at us.

Yes but Iceland is sitting on top of two spreading tectonic plates. As they spread fresh Iceland comes to the surface via volcanic activity.
