    How to make Baked Beans?

    I usually do not ask for advice being a Good Know it all bilge member but i yam stumped on this, I like good baked beans Boston Style but sweet.

    I cant stand canned beans and my efforts at spicing them up fail.

    I buy BB from a deli a few towns away from good Earth Mommas but no amount of sweet tawking will get the recipe from them.

    I have Navy beans im soaking.

    I have tried making BB a few times but either the beans were not soft enough or i burned them.

    Im all ears but do like Maple Syrupy and Bacon!!!

      You will also need some smoked crispy outside pork shoulder meat for flavoring. No bacon.

        • You will need a cast iron dutch oven for this excellent recipe from Alton Brown.
        • 1 pound dried Great Northern beans
        • 1 pound bacon, chopped
        • 1 onion, chopped
        • 2 jalapenos, chopped
        • 1/4 cup tomato paste
        • 1/4 cup dark brown sugar
        • 1/4 cup molasses
        • Vegetable broth
        • 1/4 teaspoon cayenne pepper
        • 1 teaspoon black pepper
        • 2 teaspoons kosher salt
        Directions

        Heat oven to 250 degrees F.
        Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
        Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
        Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

        These are VERY TASTY beans.

                New England Baked Beans

                1 pound (2 cups) Maine Yellow-eye beans (acceptable substitutes: Great Northern beans and Navy beans)
                1/4 pound lean salt pork
                1/2 cup dark (Crosby's Gold Star) molasses
                2 tablespoons dark (Pusser's Navy) rum
                1 teaspoon (Coleman's) mustard powder
                Salt and pepper to taste

                Presoak the beans over night. Place beans in large pot with enough water to cover. Bring to a simmer and, after 15 minutes, check every 5 minutes until a sharp breath will split the skin of a bean.

                Preheat the oven to 250 degrees Farenheit.

                Cut the salt pork into bite-sized pieces. Pour boiling water over the salt pork and let soak for a couple of minutes, then drain the water.

                Put the salt pork and beans into a 2-quart bean pot stirring in the molasses and rum. Dissolve the mustard in a bit of water and mix this in well. Add seasoning to taste -- starting with about 1/2 teaspoon each of salt and pepper. Add just enough water to cover the beans. Cover the pot and put it in the oven. Bake the beans for 5 hours, tasting occasionally, noting texture and seasoning, and adding more water as necessary. When the beans are soft and succulent, stir them well, uncover, and bake for 1/2 hour more to thicken the liquid into sauce. Serve with coleslaw and brown bread.

                Some recipes sweeten baked beans into a near confection. This recipe results in a more savory dish. The rum draws the tongue to the dry edge of the molasses flavor instead of toward its ever-elusive sweetness. One can always add more molasses to taste.

                        I'd say Tom is close. I'd say Navy beans, soaked (Pour off soaking water) and pre cooked. Strain and save liquid. Put beans in bean pot on top of thinly sliced onion, with quarter cup each ketchup and molasses, and a couple tablespoons prepared mustard. Fill with saved liquid. Bake at 250F for about 9 hours, adding more of the liquid as needed. The salt pork would have been used but I don't.

                          You simply have to monitor the beans for doneness. The thing about dried beans is that there is no way to tell how old they might be. Newer beans will be "done" sooner than older beans. And a single bag of dry beans can have beans of various age. Soaking them over night helps to even things out. But cooking times remain approximate. The 5-hour time in my recipe is pretty much a minimum. From that point one simply must check on the the beans regularly to monitor their progress.

                              there's a gazillion recipes.....and here's another....

                              1 pound dried navy or great northern beans
                              2 onions, Vidalia, chopped
                              1 cup water
                              1/4 pound bacon, lean, smoked, diced
                              1/2 cup brown sugar
                              1/3 cup ketchup
                              1/4 cup dark molasses
                              1/4 cup maple surple
                              4 cloves garlic, crushed
                              1 tablespoon salt
                              1 1/2 teaspoons dry mustard
                              1/4 teaspoon black pepper

                              Soak beans in enough water to cover plus three inches over night. Drain beans and place in a large pot or slow cooker. Add remaining ingredients. Cover and simmer for 8 to 10 hours.
