I am looking for a new sailing dinghy to replace our plastic sunfish. The primary user is a 70 yr old grandma, this in mind it must be easy to sail and have a seat. I was looking at the penobscot 14 by arch davis and a 12' clinker dingy from gartside boats. I am not a sailer so any comments would be great.

It sounds like you are looking for a traditional looking boat. But if not, I believe the Wanderer dinghy is available for ply construction. Fourteen foot, multi-chine, Bermudan sloop rig. It was designed by Proctor for a Brit. woman, Margaret Dye. A scaled down Wayfarer which was made famous by she and her husband, Frank. They can be credited with starting modern dinghy cruising. Several books, including one by Margaret, who in her seventies was still sailing her boat by herself.
There is also a stitch and glue cat ketch by Core Sound Boats (?) that has been discussed here. Fifteen foot chine hull.
